Artichoke and Avocado Sandwich

Serves 6 

  • 6 canned artichoke heart – quartered
  • 1 tbsp extra virgin olive oil
  • 1 bunch basil – finely shredded
  • 1 garlic clove – crushed
  • 1 avocado – thinly sliced
  • Cranks Whole Lotta Loaf – 12 slices
  • 1tbsp pine nuts – lightly toasted
  • 100g (7oz) mixed salad leaves
  1. Preheat the oven to 200°C / 400°F / gas mark 6.
  2. Baste the quartered artichoke hearts with oil and roast for 7 to 8 minutes until light brown.
  3. Add the basil, garlic, salt and pepper to the roasted artichokes and sliced avocado and mix well.
  4. Divide between six slice of the bread, then scatter with toasted pine nuts.
  5. Top with a handful of mixed salad leaves, a little black pepper and finaly the remaining slices of bread.
  6. Cut in half and eat fresh.
