Cheese Scone

Serves 15 

  • 450g (1lb) wholemeal flour
  • 2tbsp baking powder
  • Pinch of cayenne
  • Pinch of salt
  • 50g (2oz) butter
  • 300g (10z) cheddar cheese - grated
  • 284ml milk
  1. Put the flour, baking powder, salt and cayenne in a basin.
  2. Rub in the butter until the mixture resembles fine crumbs.
  3. Stir in 225g of the cheese and sufficient milk to give soft manageable dough.
  4. Knead gently, then roll out to 2.5cm thickness.
  5. Stamp out 7.5cm rounds with a fluted cutter.
  6. Brush with milk and sprinkle with the remaining cheese.
  7. Bake in the oven at 200°C / 400°F / gas mark 6 for about 20 minutes until golden.
  8. Cool on a wire tray.
