Parsnip, Apple and Cashew Nut Burger

Serves 6 

  • 450g (1lb) parsnips
  • 60g (2oz) cashew nuts
  • 60g (2oz) cooked butterbeans
  • 1/2 onion
  • 1-2 cooking apples
  • salt and pepper to taste
  • rice flour if needed
  1. Peel and slice parsnips, cook until soft.
  2. Fry the onion until golden brown.
  3. Grind the cashew nuts until fairly fine.
  4. Dice the apple and cook until soft.
  5. Mash the butterbeans, add the ingredients together and season making a soft mix.
  6. Shape into burgers and coat in rice flour and fry in a shallow frying pan until golden on both sides.
