Samosas

Serves 12 

  • 1 onion
  • 450g (1lb) cooked potatoes
  • 225g (1/2lb) peas
  • 225g (1/2lb) sweetcorn
  • 1 1/2 cooks spoons curry powder
  • Cumin and salt and pepper to taste
  1. Fry onions in a little oil, add the spices and cook out for a few mins.
  2. Add to the cooked potato, peas, and sweetcorn.
  3. Mix well until mix binds together, season well.
  4. Use 1 sheet of filo pastry per samosa
  5. Cook 200°C / 400°F / gas mark 6 until golden.a
