Tabbouleh

Serves 8 

For the salad:

  • 225g (8oz) bulghar wheat
  • 1 medium onion
  • 1tbsp mint – chopped
  • 6tbsp parsley - chopped

 

For the dressing:

  • 200ml oil
  • 200ml vinegar
  • 100ml water
  • 2tbsp spring onions – chopped
  • 2tsp raw brown sugar
  • 1tsp paprika
  • 2tsp soy sauce
  • ½tsp salt
  • ½tsp french mustard
  1. Place the cracked wheat in a basin and pour over sufficient boiling water to cover. Leave to soak for 30 minutes. Drain and rinse well.
  2. Finely chop the onion and combine with the mint, parsley and bulghar wheat.
  3. To make the dressing, shake all the ingredients together in a screw topped jar, and drizzle 150ml over the salad.
  4. Chill until required, and keep the dressing for your next fabulous salad.
