Vegetable Tagine

Serves 7 

  • 1/2 onion
  • 1 1/2 cloves garlic
  • 1/4 tsp ground cloves
  • 1/2 tbsp corriander
  • 1/2 tbsp tumeric
  • 1/2 tbsp cinnamon
  • 20g fresh ginger
  • 1/2 chilli
  • 30g dates
  • 1/4 tin tomatoes
  • 225g (1/2lb) sweet potatoes
  • 1/2 butternut squash
  • 125g spinach
  • 1/2 pint of dried chickpeas
  • Fresh corriander to taste
  1. Soak chickpeas overnight and boil
  2. Fry onions and garlic.
  3. Add spices, ginger, chilli and dates.
  4. Add the tomatoes and simmer for 10mins
  5. Peel and chop the sweet potato and butternut squash
  6. Add to the pan when cooked add the cooked chickpeas, spinach, corriander, and salt & pepper to taste.
